fresh tomato salad

I ate this for breakfast this morning. I agree - it sounds a little strange - tomatoes in the morning? Without eggs? Yes. And it was easy, healthy, flavorful, and filling. Here's what I did:

Fresh Tomato Salad
Serves 1

1 large superfresh heirloom tomato, diced
1-2 oz. firm tofu, diced
2 Tbsp. balsamic vinegar
1 Tbsp. olive oil
1/2 tsp. fresh basil, torn into small pieces
1/2 tsp. fresh oregano, torn into small pieces
freshly ground black pepper

Combine all ingredients in a bowl. Enjoy!
