favorite summer veggie recipe collection


It's summer. Gardens and farmers' markets are entering full swing. Sounds like the perfect time to start collecting some stellar summer veggie recipes. That's where I need your help:

If you have a blog (or the recipe is online and can be linked to), use the button at the bottom of this post to submit your recipe to the collection. I've input a few of my personal favorites to get us started. No gimmicks, no contests, my aim is simply to amass a nice collection of summer veggie recipes for all to enjoy. Submit as many recipes as you want between now and the end of July.

  2. +1 on the peach & tomato salad. I had forgotten about that one and will resurrect it asap!

  3. Summer Squash with Pasta and Chicken
    4 boneless, skinless chicken breasts, grilled, and cut in 1/2" slices.
    1 piece of banana squash approx 4x6 inches, micro in a covered dish in 1/2" of water until tender. Peel and mashy chunk.
    In a large skillet, in 1 T butter and 1 T oil, saute until crispy tender: 1 med onion cut in thin wedges, 1 zucchini squash and 1 yellow crookneck squash cut in very thin slices, i/2 a red bell pepper and 1/2 a green bell pepper cut in thin rings. If necessary add 1-2 T water. Add banana squash. Stir in 2-3 peeled and chopped garden tomatoes, Add chicken. Sprinkle with a generous amount of Italian Seasoning. Cover and cook about 2 min. just until heated through. Serve over cooked penne or curly pasta. Garnish with grated parm cheese.
