favorite summer veggie recipe collection
It's summer. Gardens and farmers' markets are entering full swing. Sounds like the perfect time to start collecting some stellar summer veggie recipes. That's where I need your help:

ReplyDeleteSummer Squash with Pasta and Chicken
ReplyDelete4 boneless, skinless chicken breasts, grilled, and cut in 1/2" slices.
1 piece of banana squash approx 4x6 inches, micro in a covered dish in 1/2" of water until tender. Peel and mashy chunk.
In a large skillet, in 1 T butter and 1 T oil, saute until crispy tender: 1 med onion cut in thin wedges, 1 zucchini squash and 1 yellow crookneck squash cut in very thin slices, i/2 a red bell pepper and 1/2 a green bell pepper cut in thin rings. If necessary add 1-2 T water. Add banana squash. Stir in 2-3 peeled and chopped garden tomatoes, Add chicken. Sprinkle with a generous amount of Italian Seasoning. Cover and cook about 2 min. just until heated through. Serve over cooked penne or curly pasta. Garnish with grated parm cheese.
